  • 1 large onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes (optional)
  • 6 cups chicken or vegetable broth
  • 1 (28 ounce) can crushed tomatoes
  • 1 (15 ounce) can cannellini beans, rinsed and drained
  • 1 (15 ounce) can kidney beans, rinsed and drained
  • 1 cup ditalini pasta
  • Salt and freshly ground black pepper to taste
  • Fresh parsley, chopped, for garnish
  • Grated Parmesan cheese, for serving

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onion, carrots, and celery. Sauté until softened (about 5 minutes).
  2. Stir in minced garlic, oregano, basil, and red pepper flakes; cook for another minute.
  3. Pour in chicken or vegetable broth and crushed tomatoes. Add rinsed cannellini and kidney beans.
  4. Bring to a boil, then reduce heat and simmer for 15 minutes.
  5. Stir in ditalini pasta and cook until al dente (8–10 minutes).
  6. Season with salt and pepper to taste before serving. Garnish with fresh parsley and grated Parmesan cheese.
