  • 1/4 cup unsalted butter (softened)
  • 3/4 cup firmly packed light brown sugar
  • 1/2 cup creamy peanut butter
  • 2 large eggs
  • 1/2 teaspoon vanilla extract
  • 1/4 cup sour cream
  • 1 1/2 cups mashed banana (about 3 or 4 medium overripe bananas)
  • 1/2 to 2/3 cups chopped nuts (such as pecans, walnuts, hazelnuts, or peanuts)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9" x 5" loaf pan.
  2. In a mixing bowl, whisk together the flour, cinnamon, baking powder, baking soda, and salt; set aside.
  3. In another bowl, use an electric mixer to beat the softened butter, brown sugar, and peanut butter until fluffy. Add eggs one at a time, followed by vanilla.
  4. Gradually incorporate the dry mixture into the wet ingredients alternating with sour cream.
  5. Fold in the mashed bananas until well combined. If desired, add chopped nuts.
  6. Pour batter into the prepared loaf pan and bake for 50 to 55 minutes or until golden brown and a toothpick comes out clean.
  7. Let cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
