  • 1 cup ground almonds (almond flour)
  • 1/2 cup plain flour
  • 1/2 cup unsalted butter, softened
  • 3/4 cup sugar
  • 2 large eggs, room temperature
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 1/4 cup sliced almonds (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line an 8-inch round cake tin.
  2. In a mixing bowl, cream together the softened butter and sugar until pale and fluffy (about 3–5 minutes).
  3. Add eggs one at a time to the mixture, beating well after each addition. Stir in the vanilla extract.
  4. In another bowl, mix ground almonds, plain flour, and baking powder. Gradually fold this dry mixture into the butter mixture until just combined.
  5. Gently fold in pear slices (reserve some for decoration), pour batter into prepared tin, smooth the top, arrange reserved pear slices on top, sprinkle with sliced almonds, and bake for 45–55 minutes or until a toothpick comes out clean.
