  • 1 cup salted butter (at room temperature)
  • 1 tablespoon vanilla extract
  • 2 large eggs
  • 1½ cups all-purpose flour
  • ½ teaspoon salt
  • ½ teaspoon baking soda
  • 2 cups pecan halves

Instructions

  1. In a large bowl or stand mixer, beat together brown sugar, butter, and vanilla until light and fluffy.
  2. Add eggs one at a time, mixing on low until just combined.
  3. In another bowl, whisk together flour, salt, and baking soda. Gradually add to wet ingredients until incorporated.
  4. Gently fold in pecan halves using a spatula.
  5. Chill the dough for 30 minutes in the refrigerator.
  6. Preheat oven to 350°F (175°C) and line cookie sheets with parchment paper.
  7. Form 1.25" dough balls and place on prepared sheets at least 3 inches apart.
  8. Bake for about 8 minutes or until edges are golden.
