  • 1 red capsicum, cut into strips
  • 1 green capsicum, cut into strips
  • 1 medium onion, chopped
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp crushed chili flakes
  • 1 tsp ground black pepper
  • 1 tsp minced garlic
  • 1 tbsp cooking oil (vegetable or sesame)
  • 1 cup basmati rice
  • 2 cups water
  • A pinch of salt

Instructions

  1. Rinse basmati rice under cold water until clear. In a pot, combine with water and salt; bring to boil. Reduce heat, cover, and simmer for 10-12 minutes. Keep warm.
  2. In a wok, heat oil over medium-high heat. Sauté garlic until fragrant.
  3. Add chicken; cook until golden brown (about 5-7 minutes).
  4. Mix in onion and capsicums; stir-fry for about 3-4 minutes.
  5. Pour in soy sauce, oyster sauce, chili flakes, and black pepper; toss to coat.
  6. Serve immediately with fluffy rice.
