  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon peppermint extract
  • Red gel food coloring
  • 1/4 cup coarse sugar or crushed peppermint candies for coating

Instructions

  1. Whisk together flour, baking powder, and salt in a medium bowl; set aside.
  2. In a large bowl, cream butter and sugar until fluffy. Beat in egg, vanilla extract, and peppermint extract.
  3. Gradually mix dry ingredients into the wet mixture until combined into a soft dough.
  4. Divide the dough in half; leave one half plain and color the other half with red gel food coloring.
  5. Wrap each dough ball in plastic wrap and chill for at least 30 minutes.
  6. Roll out each dough on a floured surface into rectangles (about 10×12 inches).
  7. Layer the colored dough on top of the plain dough; roll tightly into a log.
  8. Chill the log again for at least 2 hours before slicing into rounds.
  9. Preheat oven to 375°F (190°C) and bake cookies for about 8 to 10 minutes until edges are golden.
