  • 5 large eggs
  • 3 green onions (finely chopped)
  • 3 cloves garlic (minced)
  • 1 tablespoon fresh ginger (minced)
  • 1/2 cup frozen peas
  • 1/2 cup diced carrots
  • 3 tablespoons soy sauce
  • 2 tablespoons vegetable oil
  • 1 tablespoon sesame oil
  • 1/2 teaspoon salt
  • 1 teaspoon cornstarch
  • 1 teaspoon white pepper
  • 1 tablespoon sugar
  • 1 tablespoon apple vinegar
  • 1 tablespoon fresh cilantro
  • Sesame seeds for sprinkling

Instructions

  1. Ensure day-old rice is separated and at room temperature. Beat the eggs with salt and cornstarch until smooth.
  2. Heat a large wok over high heat until smoking; add oil and scramble the eggs quickly until just set. Remove and set aside.
  3. Wipe the wok clean, heat again until smoking, then add vegetable oil. Stir-fry garlic and ginger for 10 seconds until fragrant.
  4. Add day-old rice to the wok, breaking up clumps while tossing continuously for about 2-3 minutes.
  5. Push rice aside; add diced carrots and stir-fry for 1 minute before mixing with rice. Add peas and corn, tossing everything together.
  6. Drizzle soy sauce around the edges of the wok; toss well to combine.
  7. Return scrambled eggs to the wok, breaking them into smaller pieces while mixing in with other ingredients along with white pepper and sugar.
  8. Serve hot garnished with sliced green onions and cilantro.
