  • 1 teaspoon garlic powder

  • ½ teaspoon black pepper
  • 1½ cups jasmine rice (basmati works beautifully too)
  • 2¼ cups chicken broth
  • ¼ cup fresh cilantro, chopped
  • 2 tablespoons lime juice
  • 1 tablespoon butter
  • ½ teaspoon salt
  • 45 jalapeño peppers, stems removed
  • 1 cup fresh cilantro leaves and tender stems
  • ½ cup mayonnaise
  • 2 garlic cloves
  • 2 tablespoons lime juice
  • 1 tablespoon olive oil
  • Salt to taste

Instructions

  1. Season chicken thighs with a mixture of cumin, smoked paprika, garlic powder, salt, and pepper. Let rest.
  2. In a food processor, blend jalapeños, cilantro, mayonnaise, garlic cloves, lime juice, and olive oil until smooth to make the green sauce.
  3. Sear the chicken thighs in an oven-safe skillet until golden brown on both sides.
  4. Transfer the skillet to a preheated oven (400°F) and roast until cooked through.
  5. Cook jasmine rice in chicken broth until fluffy; stir in chopped cilantro and lime juice before serving.
