  • 2 cloves Garlic (minced)
  • 1/2 cup Low-Sodium Soy Sauce
  • 1/3 cup Pineapple Juice
  • 2 tbsp Honey or Brown Sugar
  • 1 tbsp Rice Vinegar or Apple Cider Vinegar
  • 1.5 cups Cooked Rice
  • 1 cup Pineapple Chunks (fresh or canned)
  • 1/2 Red Bell Pepper (diced)
  • 1/4 cup Green Onions (chopped)

Instructions

  1. Gather and chop all ingredients for easy access.
  2. In a skillet over medium heat, add oil and sauté minced garlic until fragrant. Add chicken pieces; cook until browned and cooked through.
  3. In a bowl, whisk together soy sauce, pineapple juice, honey or brown sugar, vinegar, and cornstarch mixed with water until smooth. Pour over the chicken in the skillet.
  4. Stir in cooked rice, pineapple chunks, diced bell pepper, and green onions. Cook until heated through (about 5-7 minutes).
