  • 1 red bell pepper, diced
  • 1 cup frozen peas
  • 3 tablespoons soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • Vegetable oil for cooking

Instructions

  1. Rinse jasmine rice under cold water until clear.
  2. In a saucepan, combine rinsed rice with 4 cups water and a pinch of salt. Bring to boil; cover and simmer for 15-20 minutes. Fluff with a fork.
  3. Heat vegetable oil in a skillet over medium-high heat. Add chicken thighs; season with salt and pepper. Cook until browned (5–7 minutes).
  4. Stir in minced garlic and ginger; sauté until fragrant (1–2 minutes).
  5. Add red bell pepper and frozen peas; cook until tender (3–4 minutes).
  6. Gently fold in diced pineapple; cook for an additional 2–3 minutes.
  7. Mix soy sauce, oyster sauce, and sesame oil in a bowl; pour over chicken mixture and simmer (2–3 minutes).
  8. Add cooked rice to the skillet; fold gently until well combined.
