  • 1/2 cup pineapple juice
  • 1/3 cup chicken broth
  • 1/4 cup honey
  • 2 tablespoons hoisin sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon vegetable oil
  • 1 red bell pepper
  • 1 onion
  • 2 cloves garlic
  • 1 teaspoon ginger
  • 1 1/2 cups canned pineapple chunks
  • Green onions and sesame seeds for garnish

Instructions

  1. Prepare ingredients by washing and chopping vegetables and cutting chicken into bite-sized pieces.
  2. In a bowl, whisk together pineapple juice, chicken broth, honey, hoisin sauce, soy sauce, rice vinegar, and cornstarch.
  3. Heat vegetable oil in a wok over medium-high heat. Add chicken, season with salt and pepper, and stir-fry until golden brown (about 5–7 minutes).
  4. Add diced bell pepper, onion, garlic, and ginger to the pan; stir-fry for another 2–3 minutes.
  5. Pour the prepared sauce over the chicken mixture; simmer for an additional 2–3 minutes until thickened.
  6. Gently fold in pineapple chunks; garnish with sliced green onions and sesame seeds before serving.
