  • 1 cup fresh or canned pineapple chunks, drained (reserve juice)
  • 1 bell pepper, diced
  • 2 green onions, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon grated fresh ginger
  • 1 cup white or jasmine rice, rinsed
  • 2 tablespoons soy sauce (or gluten-free tamari)
  • 1 tablespoon brown sugar or honey
  • 2 tablespoons vegetable oil or sesame oil, divided
  • 1/4 cup water or chicken broth

Instructions

  1. Cut chicken into bite-sized pieces and prepare vegetables: dice bell pepper, chop green onions, mince garlic, and grate ginger.
  2. In a large skillet, heat 1 tablespoon of oil over medium-high heat. Cook chicken until golden brown (about 5 minutes) and set aside.
  3. In the same skillet, add more oil if needed and sauté garlic, ginger, and bell pepper for 2-3 minutes.
  4. Stir in rinsed rice and lightly toast for about a minute; add pineapple chunks and reserved juice.
  5. Return chicken to the pan, pour in soy sauce, brown sugar (or honey), and water or broth. Cover and reduce heat to medium, cooking until rice is tender (about 15 minutes).
  6. Fluff rice with a fork; garnish with chopped green onions before serving.
