  • 4 large ripe plantains
  • 1 lb ground beef
  • 2 tsp adobo seasoning
  • 1 tbsp sazon
  • 1 onion
  • 3 garlic cloves
  • 1 green bell pepper
  • ¼ cup fresh cilantro
  • â…“ cup olives or capers
  • 1 cup tomato sauce
  • 2 cups dairy-free cheese
  • 3 large eggs
  • Coconut oil

Instructions

  1. Preheat oven to 356°F (180°C).
  2. Grease a casserole dish with coconut oil.
  3. In a bowl, mix ground beef with adobo and sazon; set aside.
  4. Sauté onion, garlic, bell pepper, and cilantro in coconut oil until soft.
  5. Add seasoned beef; brown thoroughly.
  6. Stir in tomato sauce and olives/capers; simmer for 5-10 minutes.
  7. Cut plantains lengthwise, peel, and slice into strips.
  8. Fry the plantain strips in coconut oil until golden brown.
  9. Layer the bottom of the casserole with fried plantains; brush with beaten egg.
  10. Spoon browned beef mixture over the plantains; add dairy-free cheese.
  11. Repeat layers until ingredients are used up, finishing with plantains and cheese on top.
  12. Bake for about 20 minutes until golden brown.
  13. Let cool slightly before serving.
