  • 1 tbsp unsalted butter
  • 1 brown onion, finely chopped
  • 2 garlic cloves, minced
  • 3 carrots, peeled and diced
  • 2 scallions, chopped (white and light green parts)
  • 3 waxy potatoes, diced
  • ½ cup frozen green peas
  • 4 cups chicken broth (or vegetable broth)
  • 4 tbsp full-fat sour cream
  • 4 tbsp chopped fresh dill

Instructions

  1. Prepare all ingredients by chopping vegetables and mincing garlic.
  2. In a large pot, melt butter over medium-low heat. Sauté garlic and onion for about 1 minute until fragrant.
  3. Add carrots and scallions; cook for an additional 2 minutes.
  4. Stir in salt, pepper, marjoram, turmeric, nutmeg, and bay leaf.
  5. Add diced potatoes, peas, and broth. Bring to a boil; then reduce heat to low and simmer for about 15 minutes or until potatoes are tender.
  6. Mix in sour cream and most of the dill; cook uncovered for an additional 5 minutes.
  7. Adjust seasoning as needed before serving hot with remaining dill as garnish.
