  • 2½ cups chicken broth
  • 1 (15 oz) can pumpkin puree
  • 1 medium onion (diced)
  • ½ cup shredded carrot
  • 1 clove garlic (minced)
  • ½ cup heavy whipping cream
  • Fresh thyme and parsley for garnish

Instructions

  1. In a soup pot over medium-high heat, cook the Turkey Bacon until crisp. Remove from pot and leave 2 tablespoons of grease.
  2. Sauté the onion in the grease until softened, about 3 minutes. Add carrots and garlic; cook until fragrant (1 minute).
  3. Pour in chicken broth, brown sugar, bay leaf, thyme, salt, pepper, and nutmeg. Bring to a boil; then simmer uncovered for 15 minutes.
  4. Stir in pumpkin puree and heavy cream. Simmer for another 2-3 minutes.
  5. Blend until smooth using an immersion blender. Discard bay leaf and thyme stems.
  6. Serve hot, garnished with cream, croutons, crumbled Turkey Bacon (optional), and parsley.
