  • 2 large eggs

  • 2 cups all-purpose flour
  • 1 teaspoon white vinegar
  • 1 tablespoon red food coloring
  • 1 pie crust, packaged or from scratch
  • 2 ounces cream cheese, softened
  • ½ cup granulated sugar
  • ½ teaspoon vanilla
  • ½ cup cold heavy whipping cream

Instructions

  1. Preheat your oven to 350°F (175°C). Prepare your pie crust in a 9” pie plate and chill.
  2. In an electric mixer, cream together softened butter and brown sugar until crumbly. Add eggs one at a time, mixing well after each addition. Incorporate vanilla extract, baking powder, and cocoa powder until smooth.
  3. Gradually mix in all-purpose flour, then add white vinegar and red food coloring until combined.
  4. Pour the brownie batter into the chilled pie crust placed on a cookie sheet. Bake for 50-60 minutes until puffed and cracked around the edges. Let cool completely.
  5. For the whipped cream, beat softened cream cheese with granulated sugar and vanilla until smooth. Gradually add cold heavy whipping cream while mixing until stiff peaks form.
  6. Frost the cooled brownie pie with whipped cream or serve it on the side.
