  • 3 tbsp honey
  • 2 tbsp olive oil

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a small bowl, whisk together Dijon mustard, honey, olive oil, and minced garlic until smooth.
  3. Place the trimmed lamb leg in a roasting pan and coat generously with the glaze using a basting brush. Reserve some glaze for basting.
  4. Insert a meat thermometer into the thickest part of the lamb and roast in the oven for approximately 1 hour and 30 minutes or until it reaches an internal temperature of at least 145°F (63°C) for medium-rare, basting every 30 minutes with reserved glaze.
  5. Remove from oven and let rest for at least 15 minutes before carving.
