  • 6 roma tomatoes (halved)
  • 1 cup cherry tomatoes (whole)
  • 1 medium yellow onion (chopped)
  • 1 head of garlic (halved)
  • 1/4 cup extra-virgin olive oil
  • 1 cup vegetable broth (or chicken broth)
  • 1/4 cup heavy cream
  • Fresh basil leaves
  • 1 teaspoon balsamic vinegar
  • Salt and pepper
  • 1 french or sourdough baguette (thinly sliced)
  • Olive oil and shredded gruyère (enough to fill the surface of the toasts)

Instructions

  1. Preheat your oven to 400°F.
  2. On a baking sheet, combine halved roma and whole cherry tomatoes, chopped onion, and halved garlic. Drizzle with olive oil and season with salt and pepper. Roast for 30-40 minutes until tender.
  3. Prepare the toasts by slicing a baguette, drizzling olive oil, topping with shredded Gruyère cheese, seasoning with salt and pepper, then baking until melted.
  4. Once roasted, blend the vegetables with vegetable or chicken broth and fresh basil until smooth.
  5. Stir in heavy cream and balsamic vinegar before serving topped with crispy toasts.
