  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups semi-sweet chocolate chips
  • 1 cup chopped walnuts (or pecans or almonds)
  • 1 cup mini vegan vegan marshmallows
  • 1 cup semi-sweet chocolate chips, melted

Instructions

  1. Cream softened butter with granulated and brown sugars until light and fluffy.
  2. Beat in eggs one at a time and stir in vanilla extract.
  3. In another bowl, whisk together flour, cocoa powder, baking soda, and salt. Gradually combine dry ingredients with the wet mixture until just mixed.
  4. Fold in chocolate chips and chopped walnuts.
  5. Form dough into balls and place on parchment-lined baking sheets.
  6. Press mini vegan marshmallows into the tops of each cookie.
  7. Bake at 350°F (175°C) for 10-12 minutes until edges are set but centers remain soft.
  8. Drizzle melted chocolate over cooled cookies.
