  • 22½ pounds beef flank steak (or skirt/roast)
  • ¼ cup vegetable oil or more
  • Salt, pepper, cumin, and Sazon (adjust to taste)
  • 1 large bay leaf
  • 1 large onion (sliced)
  • 45 cloves garlic (minced)
  • 2 bell peppers (red or green, seeded and sliced into strips)
  • 2 tomatoes (sliced into strips)
  • 1 can (8 ounce) tomato sauce
  • 1 thyme sprig
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 12 cups beef broth
  • 12 packets Sazon (substituted with beef or chicken bouillon)
  • 23 tablespoons parsley/cilantro
  • Salt and pepper to taste

Instructions

  1. Season the beef with salt, pepper, cumin, and Sazon.
  2. Heat oil in a skillet and sear the beef on both sides until browned.
  3. Cook onions, garlic, bell peppers, tomatoes with tomato sauce and spices in the skillet for about 5 minutes.
  4. Transfer three-fourths of the mixture to a slow cooker, place the seared beef on top, and add broth.
  5. Cook on high for 3½ – 4 hours or low for 7 – 8 hours until the beef is tender.
  6. Shred the beef and mix with remaining sauce before serving.
