  • 2 lbs beef chuck, cut into 1-inch cubes
  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 3 garlic cloves, minced
  • 3 carrots, peeled and sliced
  • 3 celery stalks, chopped
  • 3 medium potatoes, diced
  • 1 tbsp tomato paste
  • 4 cups beef broth
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 2 bay leaves
  • Salt and black pepper to taste
  • 2 tbsp all-purpose flour (optional)

Instructions

  1. Prepare all vegetables and cut the beef into cubes.
  2. In a Dutch oven, heat olive oil over medium-high heat. Brown the beef cubes on all sides for about 5-7 minutes; remove and set aside.
  3. Sauté onions, garlic, carrots, celery, and potatoes in the same pot until softened (about 5 minutes).
  4. Return browned beef to the pot; add tomato paste and spices. Stir well.
  5. Pour in the beef broth; bring to a boil. Reduce heat and simmer covered for about 1.5 hours until the beef is tender.
  6. Serve hot in crusty bread bowls.
