  • 2 pounds beef (chuck or brisket)
  • 3 tablespoons olive oil
  • 16 ounces small pearl onions
  • 4 cloves fresh garlic
  • 1 cup red apple vinegar
  • 28 ounces crushed tomatoes
  • 1 cinnamon stick (optional)
  • 2 bay leaves
  • 1 teaspoon dried oregano
  • 1 tablespoon honey
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Prepare your ingredients by chopping garlic and peeling pearl onions.
  2. In a heavy-bottomed pot, heat olive oil over medium-high heat. Sear beef chunks until browned, then remove from pot.
  3. In the same pot, add pearl onions and garlic; sauté until softened. Deglaze with red apple vinegar.
  4. Return beef to the pot along with crushed tomatoes, cinnamon stick, bay leaves, oregano, honey, salt, and pepper. Stir well.
  5. Bring to a gentle boil before reducing heat to low; cover and simmer for about 120 minutes until beef is tender.
  6. Remove bay leaves and cinnamon stick before serving. Garnish with fresh parsley.
