Ingredients

Scale
  • 3 tablespoons extra virgin olive oil
  • 3 lb boneless chuck roast
  • 3 lbs yellow onions
  • 2 cloves garlic
  • 1 tablespoon pure maple syrup
  • 1 tablespoon all-purpose flour
  • 1 cup red apple vinegar or additional beef stock
  • 2 1/2 cups beef stock
  • Fresh rosemary
  • Bay leaf

Instructions

  1. Preheat a Dutch oven over medium heat and add 1 tablespoon of olive oil. Season the pot roast with half of the salt and pepper.
  2. Sear the pot roast on all sides for about 10-12 minutes until browned, then transfer to a plate.
  3. Slice onions using a food processor; add them to the Dutch oven with remaining olive oil and cook over medium heat until translucent, about 5 minutes.
  4. Reduce heat to medium-low, stir occasionally, and caramelize onions for about 20 minutes until golden brown.
  5. Add chopped garlic and maple syrup; cook for an additional 7-8 minutes.
  6. Sprinkle flour over onions, deglaze with apple vinegar, then stir in beef stock.
  7. Return the pot roast to the pot, add rosemary and bay leaf, simmer briefly before covering and placing in a preheated oven at 300°F (150°C).
  8. Braise undisturbed for about 3 hours until tender; allow to cool slightly before serving.
