  • 2 lbs Yukon Gold potatoes, thinly sliced
  • 3 large sweet onions, sliced
  • 4 tbsp unsalted butter
  • 2 cups low-sodium beef broth
  • 1 ½ cups Gruyère cheese, shredded
  • 2 tsp fresh thyme, chopped
  • Salt and pepper to taste
  • 2 cloves garlic, minced

Instructions

  1. Preheat oven to 375°F (190°C) and grease a baking dish.
  2. In a skillet over medium heat, melt the butter and sauté onions until golden brown. Add garlic and thyme; cook for an additional minute.
  3. Layer half of the sliced potatoes in the greased dish followed by half of the onion mixture. Repeat layers.
  4. Pour beef broth over layers and top with shredded cheese.
  5. Cover with foil and bake for 45 minutes. Remove foil and bake for an additional 15 minutes until golden brown.
  6. Allow to rest for 10 minutes before serving.
