Ingredients

  • Chicken breast pieces
  • Potatoes, cubed
  • Red bell peppers
  • Green bell peppers
  • Garlic cloves, minced
  • Olive oil
  • Mixed dried herbs (oregano, thyme, basil)
  • Paprika
  • Salt & pepper
  • Steamed white rice
  • Chopped fresh chives

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and chop potatoes into cubes and slice bell peppers into strips. Mince garlic.
  3. In a mixing bowl, combine chicken, olive oil, garlic, herbs, paprika, salt, and pepper; toss until coated.
  4. Spread seasoned potatoes on a baking sheet in a single layer and roast for 15 minutes.
  5. Add the seasoned chicken to the baking sheet and roast together for another 15 minutes until chicken is cooked through.
  6. In the last few minutes of cooking, add sliced bell peppers to the baking sheet; cook until softened.
  7. Serve warm with steamed rice garnished with fresh chives.
