  • 1 sleeve finely crushed saltine crackers
  • 2 room temperature eggs
  • 1 medium yellow onion, minced
  • 1 medium green bell pepper, minced
  • Garlic powder
  • 3 tablespoons ketchup
  • 1 tablespoon brown sugar
  • Onion powder
  • Black pepper
  • 1/2 cup canned crushed tomatoes

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine ground beef, crushed crackers, minced onion, bell pepper, garlic powder, ketchup, brown sugar, onion powder, black pepper, and eggs. Mix until well incorporated.
  3. Roll the mixture into balls approximately 1 inch in diameter and place them on a parchment-lined baking sheet.
  4. Bake for about 50 minutes or until the meatballs are cooked through and golden brown.
  5. Serve hot with your choice of sides or sauces.
