3 lbs beef chuck roast
1 onion, quartered
4 cloves garlic, minced
3–4 dried guajillo chilies
2–3 dried ancho chilies
1 tablespoon ground cumin
1 tablespoon dried oregano
1 tablespoon chili powder
4 cups beef broth
Salt and pepper to taste
Jalapeño or serrano peppers (to taste)
1 tablespoon apple cider vinegar
Fresh cilantro (for garnish)
Instructions
Prepare the chilies: Remove the stems and seeds from the dried guajillo and ancho chilies. Toast them gently in a dry pan over low heat until fragrant.
Make the marinade: Blend toasted chilies, garlic, onion, cumin, oregano, chili powder, and beef broth until smooth.
Marinate the meat: Place beef chuck roast in the crockpot and pour marinade over it. Season with salt and pepper.
Cook: Cover and cook on low for 8-10 hours or high for 4-6 hours until tender.
Shred the meat: Remove beef from pot, shred with forks, then return to sauce.
Serve: Ladle into bowls garnished with chopped onion and cilantro; serve with warm tortillas.
