  • 2 1/2 tsp kosher salt
  • 1 1/2 tsp freshly ground black pepper
  • 1 tbsp smoked paprika
  • 1 tbsp brown sugar
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1 tsp dried thyme
  • 2 tbsp olive oil
  • 2 large yellow onions, thinly sliced
  • 6 cloves garlic, smashed
  • 1 1/2 cups low-sodium beef broth
  • 2 tbsp tomato paste
  • 1 tbsp apple cider vinegar
  • 2 bay leaves

Instructions

  1. Pat the brisket dry and trim excess fat. Mix kosher salt, black pepper, smoked paprika, brown sugar, garlic powder, onion powder, cumin, chili powder, and thyme, then rub evenly over brisket.
  2. Heat olive oil in a skillet over medium-high heat. Sear brisket on each side for 3–4 minutes until browned.
  3. In the same skillet, sauté sliced onions until softened; add smashed garlic and cook for another 30 seconds.
  4. Pour in beef broth, tomato paste, and apple cider vinegar; simmer for one minute. Transfer mixture to slow cooker or Dutch oven with bay leaves on top.
  5. For slow cooker: Cook on Low for 8–10 hours or High for 5–6 hours; for oven: bake at 300°F (150°C) for about 3½ – 4½ hours until fork-tender.
  6. Let brisket rest for 20 minutes before slicing against the grain.
