  • 2 lbs lamb shoulder or leg, cut into chunks
  • 2 tablespoons vegetable oil
  • 1 large onion, finely chopped
  • 4 garlic cloves, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon chili powder (optional)
  • 1 can (14 oz) diced tomatoes
  • 1/2 cup plain yogurt

Instructions

  1. Prepare the ingredients by chopping the onion and mincing the garlic.
  2. In a large skillet over medium heat, add vegetable oil and sauté the onion until soft (about 5 minutes). Stir in garlic and ginger for another minute.
  3. Add spices (curry powder, cumin, paprika, cinnamon, and chili powder if using) to the skillet and toast for about 30 seconds.
  4. Transfer the mixture to a slow cooker. Add lamb chunks and diced tomatoes with their juices; stir well.
  5. Cook on low for 6-8 hours or high for 4 hours until lamb is tender.
  6. Stir in yogurt just before serving.
