  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary

  • 6 cloves garlic, minced
  • 1 onion, diced
  • 3 carrots, peeled and sliced
  • 2 large potatoes, cut into ½-inch cubes (1 pound)
  • 3 cups chicken broth
  • 1 bay leaf
  • 1/2 cup milk
  • 1 cup green peas, frozen
  • Black pepper, to season

Instructions

  1. Dice chicken thighs into 1-inch pieces and season with salt and pepper.
  2. In a skillet, heat olive oil over medium heat. Sear chicken until browned (4-5 minutes).
  3. Transfer seared chicken to the slow cooker; add flour, thyme, rosemary, salt, garlic, onion, carrots, potatoes, chicken broth, and bay leaf.
  4. Cover and cook on low for 7-8 hours or high for 3-4 hours.
  5. Stir in frozen peas and milk during the last 10-15 minutes of cooking.
