  • 1 large sweet onion, finely chopped
  • 2 cloves garlic, minced
  • 3 cups low-sodium beef broth
  • 1 (6-ounce) can tomato paste
  • 2 (10-ounce) cans diced tomatoes with green chilies
  • 1 (14.5-ounce) can fire-roasted diced tomatoes
  • 1 (15.5-ounce) can dark red kidney beans
  • 1 (15.5-ounce) can pinto beans
  • 3 tablespoons chili powder
  • 2 teaspoons ground cumin
  • 1 teaspoon smoked paprika
  • 1 tablespoon brown sugar
  • ¼ teaspoon red pepper flakes
  • ⅛ teaspoon ground cayenne
  • kosher salt and black pepper to taste

Instructions

  1. In a large skillet over medium heat, brown the ground beef or turkey and add chopped onion halfway through. Add minced garlic for one minute before draining excess grease.
  2. In a bowl, whisk together beef broth and tomato paste; pour over meat in the slow cooker.
  3. Add diced tomatoes, kidney beans, pinto beans, and spices to the slow cooker.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  5. Season with salt and pepper to taste before serving warm.
