  • 2 pounds cubed Welsh lamb (shoulder or neck)
  • 2 onions, diced
  • 2 leeks, finely diced
  • 2 carrots, cubed
  • 2 parsnips, diced
  • 3 large baking potatoes, thinly sliced
  • 2 cups lamb or chicken stock
  • Salt and pepper (to season)
  • 2 tbsp vegetable oil (to brown lamb)
  • 2 tbsp butter
  • 2 tbsp plain flour
  • 1 tsp Worcestershire sauce
  • 1 tbsp tomato paste
  • ½ tbsp cranberry sauce or seedless raspberry jam
  • 1 tsp garlic paste or fresh minced garlic
  • 2 bay leaves
  • 1 tsp fresh thyme
  • 1 tbsp melted butter for brushing
  • Rosemary sprig (to garnish)

Instructions

  1. Season lamb with salt and pepper; brown in a frying pan with vegetable oil.
  2. Sauté onions and leeks in butter until softened.
  3. Create a gravy base by combining flour with stock; add Worcestershire sauce, tomato paste, garlic, and cranberry sauce.
  4. In the slow cooker, combine browned lamb, gravy mixture, parsnips, carrots, and bay leaves.
  5. Layer sliced potatoes on top; season with thyme and remaining salt and pepper.
  6. Cook on HIGH for 7-8 hours until lamb is tender.
  7. Brush potatoes with melted butter before serving; garnish with rosemary.
