  • 2 lbs lamb shoulder, cut into cubes
  • 1 large onion, sliced
  • 3 carrots, cut into chunks
  • 1 can chickpeas, drained
  • 1 cup dried apricots
  • 3 cloves garlic, minced
  • 2 tbsp ras el hanout spice mix
  • 1 tsp ground cumin
  • 1 tsp ground cinnamon
  • 1 tbsp tomato paste
  • 2 cups chicken broth
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh cilantro or parsley for garnish (optional)
  • Toasted almonds for garnish (optional)

Instructions

  1. In a bowl, mix ras el hanout, cumin, cinnamon, salt, and pepper with olive oil to create a spice paste.
  2. Coat the lamb pieces with the spice paste and marinate for at least 1 hour (overnight for best flavor).
  3. Place sliced onions at the bottom of the slow cooker, followed by marinated lamb.
  4. Add chopped carrots, chickpeas, and dried apricots.
  5. Mix tomato paste with broth in a separate bowl and pour over the ingredients.
  6. Cover and cook on low for 7-8 hours until the lamb is fork-tender.
  7. Adjust seasoning if necessary and garnish with fresh herbs and toasted almonds before serving.
