  • 1 large bone-in lamb shoulder (about 45 lbs)
  • 6 cloves garlic, halved
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 2 tablespoons fresh oregano, chopped
  • 1 tablespoon coarse sea salt
  • 1 teaspoon black pepper
  • Olive oil (for caramelizing onions)
  • Honey (for herb glaze)

Instructions

  1. Preheat your oven to 325°F (163°C). Pat the lamb shoulder dry with paper towels.
  2. In a bowl, combine rosemary, thyme, oregano, sea salt, and black pepper. Rub this mixture over the lamb and insert halved garlic cloves into slits in the meat.
  3. Place the lamb in a roasting pan and cover loosely with foil. Roast for about 4 hours or until tender, removing the foil during the last hour.
  4. While the lamb roasts, slice two large onions thinly and caramelize them in olive oil over medium heat until golden brown.
  5. Once cooked through, let the lamb rest for at least 20 minutes before slicing. Drizzle with a honey herb glaze made from mixing honey with leftover herb seasoning and serve alongside caramelized onions.
