  • 1 cucumber, diced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1/2 cup sliced black olives
  • 1/4 cup fresh parsley, chopped
  • 1/2 cup grated Parmesan cheese
  • 3/4 cup Italian dressing

Instructions

  1. Boil salted water in a large pot and cook spaghetti according to package instructions until al dente. Drain and rinse under cold water.
  2. In a mixing bowl, combine cucumber, red bell pepper, green bell pepper, cherry tomatoes, red onion, black olives, and parsley.
  3. Add the cooled spaghetti to the vegetable mix along with Parmesan cheese and Italian dressing. Toss well using tongs.
  4. Cover and chill in the refrigerator for at least one hour before serving.
