  • 2 cups water
  • 2 tablespoons rice vinegar
  • 1 tablespoon sugar
  • ½ teaspoon salt
  • 1 can (12 oz) turkey spam
  • 2 ½ teaspoons soy sauce
  • 2 tablespoons sugar (for caramelization)
  • ¼ cup water (for sauce)
  • 6 eggs
  • 3 sheets roasted seaweed nori

Instructions

  1. Rinse the sushi rice until the water runs clear. Cook rice in a rice cooker or stovetop pot with water.
  2. In a small bowl, mix rice vinegar, sugar, and salt. Once the rice is cooked, drizzle this mixture over it and combine gently.
  3. Slice the turkey spam into thick pieces and fry in a skillet until crispy. Combine soy sauce, sugar, and water in the pan to caramelize the spam.
  4. Whisk eggs in a bowl and cook in a greased skillet to form an omelet. Roll tightly and slice.
  5. Assemble by pressing seasoned rice into musubi mold or plastic wrap, layering with egg and caramelized spam before wrapping in nori.
