  • 1 salmon fillet
  • 1 cup baby potatoes
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • Salt & pepper, to taste
  • 1 tsp olive oil or butter
  • 1 tsp butter or olive oil
  • 1 tsp dried dill (or fresh, chopped)
  • Sliced avocado
  • 2 soft-boiled eggs

Instructions

  1. Boil baby potatoes in salted water until tender (10-12 minutes). Drain and toss with olive oil or butter, dill, and salt.
  2. Season the salmon fillet with smoked paprika, garlic powder, salt, and pepper. Heat olive oil in a skillet over medium heat and sear the salmon for about 3-4 minutes on each side until golden brown.
  3. Boil eggs in another pot for 7-8 minutes for jammy yolks. Cool under cold water, peel, and slice in half.
  4. Assemble the bowl by layering salmon next to dill potatoes, sliced avocado, and halved eggs. Serve warm.
