  • 4 cups low-sodium vegetable broth
  • 3 tablespoons miso paste (red or white)
  • 2 tablespoons soy sauce (or tamari for gluten-free)
  • 1 tablespoon Sriracha (adjust to taste)
  • 1 can full-fat coconut milk
  • Salt and pepper to taste
  • 1/4 cup chopped green onions
  • 1/4 cup chopped cilantro

Instructions

  1. Prepare vegetables by washing and chopping the carrots, onion, garlic, and ginger.
  2. In a large pot over medium heat, add olive oil. Once hot, sauté diced onion until translucent. Add minced garlic and grated ginger; cook until fragrant.
  3. Stir in chopped carrots; cook for about 5 minutes.
  4. Pour in vegetable broth; bring to a boil. Reduce heat and simmer until carrots are tender (about 15 minutes).
  5. Blend the soup until smooth using an immersion blender or countertop blender; return to heat.
  6. Stir in miso paste, soy sauce, Sriracha, and coconut milk; mix well. Adjust seasoning with salt and pepper as needed.
