  • 150g sirloin or ribeye steak
  • 2 large eggs
  • Sliced avocado
  • Halved cherry tomatoes
  • 1 tbsp olive oil
  • Salt & freshly cracked black pepper
  • Chopped fresh parsley (for garnish)

Instructions

  1. Pat the steak dry, season with salt and pepper, then heat olive oil in a skillet over high heat. Sear for 2-3 minutes per side for medium-rare. Let rest for 5 minutes before slicing.
  2. In the same skillet, reduce heat to medium and add more oil if needed. Crack in the eggs and cook until whites are set but yolks remain runny, about 2-3 minutes.
  3. In a serving bowl, arrange sliced avocado and halved cherry tomatoes. Lay sliced steak over the veggies and top with sunny-side-up eggs.
  4. Garnish with chopped parsley and additional salt and pepper if desired.
