Ingredients

Scale
  • 1.25 lbs flank or strip steak
  • Sea salt and cracked black pepper
  • 1 tablespoon avocado oil (or olive oil)
  • 8 slices nitrate-free turkey bacon
  • 4 large hardboiled eggs
  • 8 cups chopped romaine lettuce
  • 1 cup cherry tomatoes
  • 1 small red onion
  • 1 large avocado
  • 1 medium ripe avocado (for dressing)
  • 1/3 cup Kite Hill almond milk Greek yogurt
  • 1/4 cup + 2 tablespoons plain almond milk (or water)
  • 1/3 cup cilantro leaves
  • 1 teaspoon garlic powder
  • 1/2 teaspoon sea salt
  • 2 tablespoons fresh lime juice

Instructions

  1. Prepare your ingredients by cooking the turkey bacon and hardboiling the eggs.
  2. Season the steak with sea salt and black pepper. Heat a skillet or grill over medium-high heat and cook the steak for about 3 minutes on each side for medium rare.
  3. Allow the steak to rest for 10 minutes before slicing.
  4. Assemble the salad by layering greens, tomatoes, onions, eggs, turkey bacon, and sliced avocado in a bowl.
  5. Blend the dressing ingredients until smooth and creamy.
  6. Slice the rested steak against the grain and arrange it on top of the salad. Serve with dressing on the side or drizzled over.
