  • 1.5 pounds beef belly
  • 2 tablespoons vegetable oil
  • 4 cloves garlic
  • 1 thumb-sized piece of ginger
  • ¼ cup light soy sauce
  • ¼ cup dark soy sauce
  • ⅓ cup apple vinegar
  • ¼ cup hoisin sauce
  • ¼ cup brown sugar
  • 1 cup water

Instructions

  1. Heat vegetable oil in a large pan over medium heat. Sear beef belly pieces until browned on all sides (about 5–7 minutes). Remove and set aside.
  2. In the same pan, sauté minced garlic and sliced ginger for 1–2 minutes until fragrant.
  3. Return seared beef to the pan. Add both soy sauces, apple vinegar, hoisin sauce, brown sugar, and water. Stir well to coat the beef.
  4. Bring to a boil, then reduce heat to low and let simmer uncovered for 1 to 1½ hours until beef is tender and the sauce thickens into a sticky glaze.
  5. Taste and adjust seasoning if needed before serving hot over steamed rice or in lettuce wraps.
