  • 2 teaspoons vanilla extract
  • ½ cup vegetable oil
  • ⅓ cup granulated sugar
  • 2 cups Krusteaz Pancake Mix
  • 1 cup chopped strawberries
  • ¾ cup powdered sugar
  • ⅛ teaspoon strawberry extract (optional)
  • 2 tablespoons heavy whipping cream

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare a 9×5-inch loaf pan.
  2. In a large bowl, mash the overripe banana until smooth.
  3. Add eggs, water, 1 teaspoon vanilla extract, and vegetable oil to the mashed banana; stir until well combined.
  4. Incorporate granulated sugar and pancake mix into the wet mixture, stirring until just combined.
  5. Gently fold in chopped strawberries.
  6. Pour the batter into the prepared loaf pan and bake for 40-50 minutes or until a toothpick comes out clean.
  7. Allow cooling for 15–20 minutes before removing from the pan.
  8. For the glaze, whisk together powdered sugar, remaining vanilla extract, strawberry extract (if using), and heavy cream until smooth; adjust consistency as needed.
