  • 1 cup almond flour
  • 1/2 cup rolled oats
  • 1/2 cup unsweetened shredded coconut
  • 3 tbsp maple syrup
  • 2 tbsp coconut oil (room temperature)
  • 1 cup fresh strawberries (finely diced)
  • 454 g silken tofu (drained)
  • 1/3 cup maple syrup
  • 1/4 cup raw cacao powder
  • 3 tbsp corn starch
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 375°F (190°C) and line an 8×8 baking sheet with parchment paper.
  2. In a mixing bowl, combine 1 cup almond flour, 1/2 cup rolled oats, 1/2 cup unsweetened shredded coconut, 3 tbsp maple syrup, and 2 tbsp room temperature coconut oil. Mix until crumbly and press into the bottom of the prepared baking sheet.
  3. In a blender, combine 454 g silken tofu, 1 cup finely diced strawberries, 1/3 cup maple syrup, 1/4 cup raw cacao powder, 3 tbsp corn starch, and 1 tsp vanilla extract. Blend until smooth.
  4. Pour the filling over the crust and spread evenly. Bake for about 32 minutes or until set.
  5. Allow to cool completely before slicing into squares.
