  • ½ cup granulated sugar
  • ½ cup sour cream
  • 2 large eggs
  • ½ cup strawberry puree or jam
  • 1 ½ cups crushed graham crackers or golden Oreos
  • ¼ cup unsalted butter (for crust)
  • 1 cup crushed golden Oreos or vanilla wafers (for topping)
  • ½ cup freeze-dried strawberries

Instructions

  1. Preheat the oven to 325°F (163°C) and line a mini muffin tin or 8×8-inch pan with parchment paper.
  2. For the crust, mix crushed graham crackers (or Oreos) with melted butter and press into the bottom of the prepared pan.
  3. In a mixing bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in sour cream and strawberry puree until fully combined.
  4. Pour the cheesecake mixture over the crust and bake for 20–25 minutes (mini muffin tins) or 35–40 minutes (8×8-inch pan) until set but still slightly jiggly in the center.
  5. Cool to room temperature and refrigerate for at least four hours to set.
