- 8–9 oz pkg tortellini
- 1 medium zucchini
- 1 large carrot
- 1 pint grape tomatoes
- 5 green onions
- 1/4 cup fresh parsley
- 3/4 cup creamy ranch dressing
- 2–3 tbsp shredded Parmesan cheese
- Cook the tortellini according to package instructions in salted boiling water. Drain and rinse under cold water.
- While pasta cooks, chop the zucchini, carrot, tomatoes, green onions, and parsley.
- In a large mixing bowl, combine the cooled tortellini and chopped veggies.
- Add the ranch dressing and sprinkle with Parmesan cheese. Toss gently until well combined.
