  • 1 tablespoon cornstarch
  • 1 tablespoon rice vinegar
  • 1 cup pineapple chunks (fresh or canned)
  • 2 cups cooked white or brown rice
  • 1 tablespoon sesame oil or vegetable oil

Instructions

  1. Prepare the ingredients by dicing the chicken, mincing the garlic, and chopping fresh pineapple if using.
  2. In a small bowl, whisk together soy sauce, brown sugar, rice vinegar, and cornstarch until smooth.
  3. Heat sesame or vegetable oil in a skillet over medium-high heat. Add the chicken and cook for 6–8 minutes until golden.
  4. Stir in garlic and pineapple; cook for an additional 2–3 minutes.
  5. Pour the sauce mixture into the skillet, stirring continuously for about 2–3 minutes until thickened.
