  • 50 ml vegetable oil
  • Salt and pepper to taste
  • 1 onion
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 6 tablespoons ketchup
  • 2 tablespoons cider vinegar
  • 6 tablespoons demerara sugar
  • 1 tablespoon soy sauce
  • 1 tablespoon fresh ginger
  • 2 cloves garlic
  • 432 g tin pineapple pieces, drained

Instructions

  1. 1. Season diced chicken with salt and pepper, then coat evenly with cornstarch.
  2. 2. Heat vegetable oil in a frying pan over medium heat and add the coated chicken.
  3. 3. Fry until golden brown, about 5–7 minutes; remove chicken from the pan.
  4. 4. Sauté sliced onion and bell peppers in the same pan for 3–4 minutes.
  5. 5. In a bowl, mix ketchup, cider vinegar, demerara sugar, soy sauce, ginger, garlic, and reserved pineapple juice; pour over vegetables.
  6. 6. Add cooked chicken and drained pineapple to the pan; stir gently to combine.
  7. 7. Simmer for an additional 5 minutes before serving hot over rice or noodles.
