  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon cinnamon
  • Salt and pepper to taste
  • 1/2 to 1 cup vegetable broth (optional)

Instructions

  1. Prepare your ingredients by chopping the sweet potatoes, onion, bell peppers, and mincing the garlic.
  2. Drain and rinse the black beans thoroughly.
  3. (Optional) In a skillet over medium heat, sauté the onion for about 5 minutes until translucent. Add garlic and bell peppers; cook for another 3 minutes. Stir in spices and toast for one minute.
  4. Combine all ingredients in a crockpot: sweet potatoes, black beans, diced tomatoes (including juice), sautéed vegetables (if using), and remaining spices.
  5. Cover and set your slow cooker to Low for 6–8 hours or High for 3–4 hours.
  6. Adjust consistency with vegetable broth if desired before serving.
