  • 2 ½ cups shredded beef
  • ½ cup mashed potatoes
  • 1 medium tomato (diced)
  • 1 small onion (chopped)
  • 1 jalapeno pepper (chopped)
  • pinch of ground cumin
  • salt and pepper
  • vegetable oil (as needed)
  • 3 medium tomatoes (for salsa)
  • ½ small onion (for salsa)
  • 3 chile de arbol (optional, for salsa)
  • 1 clove garlic (for salsa)
  • 1 Tablespoon dried oregano (for salsa)
  • ½ teaspoon ground cumin (for salsa)
  • 1 teaspoon vegetable oil (for salsa)
  • salt and pepper (to taste, for salsa)
  • Pickled onions (for serving)
  • Lettuce (shredded, for serving)
  • Mexican crema (or sour cream, for serving)
  • queso fresco (or any cheese you prefer, for serving)

Instructions

  1. In a mixing bowl, combine the shredded beef with mashed potatoes, diced tomato, chopped onion, jalapeno pepper, ground cumin, salt, and pepper. Mix well until combined.
  2. Set aside to let the flavors meld.
  3. In a skillet or frying pan, heat enough vegetable oil over medium heat until hot but not smoking.
  4. Take a corn tortilla and place about 2 tablespoons of the beef filling in the center.
  5. Fold the tortilla in half to create a taco shape. Press gently to seal.
  6. Carefully place the folded tacos into the hot oil using a spatula.
  7. Fry each side for about 3-4 minutes or until golden brown and crispy.
  8. Remove from oil and drain on paper towels.
  9. In a blender or food processor, combine tomatoes, onion, optional chile de arbol, garlic, oregano, ground cumin, vegetable oil, salt, and pepper.
  10. Blend until smooth for your salsa.
  11. Serve your crispy tacos dorados hot with pickled onions, shredded lettuce, Mexican crema, and queso fresco on top.
