  • 2 1/2 cups chocolate bear-shaped graham crackers, crushed (230g)
  • 7 tbsp unsalted butter, melted (98g)
  • 5 oz kataifi dough, chopped (150g)
  • 6 tbsp unsalted butter (85g)
  • 3/4 cup pistachio paste (300g)
  • 2 tbsp tahini (30g)
  • 24 oz cream cheese, softened (680g)
  • 1 cup white sugar (200g)
  • 1/3 cup sour cream, at room temperature
  • 1/2 cup pistachio paste
  • 2 tbsp tahini
  • 3 large eggs, at room temperature
  • 1/4 tsp almond extract
  • 2 tsp vanilla extract
  • 1/2 tsp salt
  • 1 1/4 cups chopped semi-sweet chocolate or chocolate chips (212g)
  • 3/4 cup heavy cream (6 fl oz / 180ml)

Instructions

  1. Preheat the oven to 350°F (175°C). In a mixing bowl, combine crushed chocolate graham crackers and melted butter. Press into the bottom of a springform pan.
  2. Melt 6 tablespoons of unsalted butter and mix with chopped kataifi dough. Layer this over the crust.
  3. Beat together softened cream cheese and sugar until smooth, then add sour cream, pistachio paste, tahini, eggs one by one, almond extract, vanilla extract, and salt. Mix until combined.
  4. Melt semi-sweet chocolate and fold into the mixture gently. Pour over the crust.
  5. Bake for 70 minutes or until slightly jiggly in the center. Cool completely before refrigerating for at least four hours.
